Parkin: 34 (microwave)
Ingredients:
4 oz S.R. flour
2 - 2 1/2 teaspoons ground ginger
6 oz fine oatmeal
4 oz brown sugar
4 oz margarine
8 oz treacle
2 eggs, beaten
1/4 pint milk
2 tablespoons syrup
stem ginger, sliced
Method:
Line the base of a 7 - 8 inch round, deep dish (not metal for microwave cooking).
Sieve together flour and ginger, then stir in oatmeal.
Place sugar, margarine and treacle in a bowl and microwave on High for 1 1/2 minutes. Stir mixture lightly.
Make well in centre of dry ingredients and pour in melted mixture, beaten eggs and enough milk to give a pouring thickness batter.
Pour into the prepared dish.
When cooked, leave to stand for 5 minutes.
Wrap, and keep for 2 - 3 days.
Cut into squares before serving, brushed with syrup and topped with ginger.
Baking time:
12 - 14 minutes on Medium High (75%) until well risen or until sides have shrunk from edges and surface is dry but springy. (Time for 650 watt microwave).
